Pho 75: The bowl I was raised on, the basis for all noodle comparisons and the end-all of human illness. There are 5 locations in the DC area, capable of serving one the area's best bowls of Vietnamese goodness. The broth is a little on the heavy side but a #1 with raw meat at peak freshness in a rarely paralleled experience. The noodles are a little firm upon serving but fine after a few minutes of soaking. I've noticed fluctuations in quality of the broth, which I assume means they are not creating it daily. Fans of extremely light, herbal or udon/ramen broths may not like 75's robust version. Due to heavy amounts of MSG and a not-so-aggressive fat skimming, their broth lends itself to be a little on the greasy side. Still, a personal favorite… taken from somebody who seeks out pho spots from New York to Little Saigon.
