I went to proof for a happy hour, and ended up ordering enough small plates to call it dinner. Everything we had was absolutely outstanding, and I would definitely return.
During our happy hour - cum - dinner, we ate the Tuna Tartare, Sheep's Milk Ricotta Flatbread, Crispy Pork Belly, and a 3-cheese plate (served with raw honey, applesauce, and raisin bread). Really nice cheese selection to choose from. Everything was outstanding, and I would order everything again.
The only reason I give them 4 sporks instead of 5 is that its overpriced. The small plates range from $9-15 (for an appetizer-sized portion), and good luck finding a glass of wine for under $10.

Overall, one of the better dinners I've had in DC. The food was exceptional, especially for a Sunday night. Our server was very attentive, and made good recommendations.
The wine list is 50 pages long, and I had done some research beforehand in case the list was passed to me. I went in having narrowed my search to 4 options from the list, and all 4 were out of stock. We ended up ordering by the glass, and we had to request the list for wines by the glass. It is a very good list, with sample sizes available.
The only thing I was dissatisfied with was the service at the bar. We sat at a table and no one came to offer us drinks. So I went to the bar and could not get the bartenders attention from his side work. The bar seats were full, but the bar was not crowded by any means.

I really enjoyed my experience at Proof--when I arrived at about 5:30, the place was empty, but it was absolutely buzzing when I left an hour later. I sat at the bar, where I was well-taken care of by the restaurant's knowledgeable and friendly staff. The wines by the glass are thoughtful, reasonably priced, and available in various pours--a really nice touch. I ordered two small plates, the gnocchi and the sweetbreads. The former was absolutely phenomenal--great texture, fabulous flavor, and surprisingly light. The latter was tasty, though I found it to be a little too sweet for my personal taste. Overall, I can't wait to get back to Proof for a full food-and-wine experience!

One of the best dinning experiences I have had in DC. I had the lamb which was cooked perfectly and tasted great. Proof is also the perfect place place just to sit and injoy some wine, a cheese board (which was reasonable priced) and cured meat plates. The staff was very freindly.
