<p>This morning, yours truly spent an hour-plus on <a href="http://www.northernvirginiamag.com/grill-warren/"><strong>Warren Rojas</strong>' hot seat</a> over at <em><strong>Northern Virginia</strong> </em>magazine. Truth be told, the mag's readers went pretty easy on me (far easier than the <a href="http://www.washingtoncitypaper.com/blogs/citydesk/2010/01/14/carman-on-why-d-c-has-so-little-great-ethnic-food/">putzes on </a><strong><a href="http://www.washingtoncitypaper.com/blogs/citydesk/2010/01/14/carman-on-why-d-c-has-so-little-great-ethnic-food/">City Desk</a> </strong>who seem to think I'm a traitor for pointing out the obvious).</p>
<p>The most pointed (and funniest) question I got had to be this one:</p>
<blockquote><p>Why does everyone kiss Jose Andres' ass so much? He's never here. And it's all close quarters and a shoutfest at his best restaurants (minibar, Zaytinya).</p></blockquote>

<p>Interestingly enough, the question came from "Penn Quarter," where all of Andrés' restaurants are located. Could it have come from some disgruntled soul within Andrés' <strong><a href="http://www.thinkfoodgroup.com/">THINKfoodGROUP</a></strong> empire? Now <em>that</em> would be funny.</p>

<p>I mean, I must be crazy to subject myself to the grilling of <em>another </em>publication's readers. But there you have it: At 11 a.m. tomorrow, you can hit me with all the questions you've ever wanted to ask and were somehow afraid to post anonymously on the Y&amp;H blog. And I'll be required the answer them with all the honesty of an anonymous reporter and critic.</p>
<p>The reason Rojas invited me to cop a squat on his weekly hot seat is because he just wrapped up a feature in which he polled food critics from across the country to speak out about anonymous dining. Is it important? Is it dead? Is it a joke? The feature isn't yet available online, which tells you something about Rojas' organizing skills, but trust me, it's a killer story. Look for it whenever the hell it appears in print or online.</p>

<p>Given the apparently precarious nature of our local dining scene, we should all jump at the chance to poke and prod at one of the area's premier chefs, <strong>Morou Ouattara</strong>, who recently told the <em>Washingtonian</em>'s <strong>Todd Kliman </strong>that <a href="http://www.washingtonian.com/blogarticles/restaurants/bestbites/12082.html">he'll be pulling the plug on </a><strong><a href="http://www.washingtonian.com/blogarticles/restaurants/bestbites/12082.html">Farrah Olivia</a> </strong>in Old Town on April 29.</p>
<p>And now we have the chance: Ouattara will be hosting today's 11 a.m. edition of<a href="http://www.northernvirginiamag.com/grill-warren/"> <strong>Grill Warren </strong>at <em>Northern Virginia </em>magazine</a>.</p>
<p>Not that Y&amp;H is asking you to do his work, but here's what I'd want to know, if I got a chance to grill Morou:</p>

<li>Was Old Town the right market for your brand of modern cooking or was it just the wrong address in Old Town? Or both?</li>
<li>Does the current economy make it practically impossible to run a true, high-end restaurant?</li>
<li>How do you feel about working with your brother at the planned new restaurant/bar/lounge in Crystal City? No sibling rivalry?</li>
<li>Do you think the D.C. market is open right now for another go at Farrah Olivia? Or do you think you should wait to reopen the restaurant when the economy improves?</li>

<p>That's at least what the mercurial <strong>Michael Landrum</strong>, owner of <strong><a href="http://www.washingtoncitypaper.com/food/restaurant.php?rID=635">Ray's the Steaks</a></strong>,<strong> </strong>told readers last week when he guest hosted <a href="http://www.northernvirginiamag.com/restaurants/food_chat_archive.html?chat=61"><strong>Grill Warren</strong></a>, food critic <strong>Warren Rojas</strong>' weekly chat for <a href="http://www.northernvirginiamag.com/"><em>Northern Virginia </em>magazine</a>.</p>
<p>Question from "Aldie": When is <strong>Ray's the Net</strong> going to be up and running? Any chance a seafood paella might make the final cut or you keeping to just grilled fish?</p>
<p>Landrum's response: The actual name is now <strong>Ray's: The Catch</strong>, and we hope to have it up almost immediately after <a href="http://www.washingtoncitypaper.com/display.php?id=36613">the move to 2300</a>, hopefully no later than February 24th. Paella will not be on the opening menu, but it is the first in line to be featured as a special, or maybe second, now that I think about it.</p>
<p>And for those of you who <em>really </em>can't get enough Landrum, someone on Grill Warren asked the chef/owner when he'll stop dating strippers and find someone respectable.  The response was classic Landrum:</p>
