José Andrés Bringing Chinese-Peruvian Restaurant to Penn Quarter
Now that Wagamama is not coming to Penn Quarter, what will happen to the long vacant space at 418 7th St. NW? Restaurateur José Andrés announced today that he's taking it over for a Chinese-Peruvian restaurant tentatively called China Chilcano.
The restaurant, set to open in the spring, will feature Chifa cuisine, which is the term used in Peru to describe Chinese cooking using many Peruvian ingredients. Dishes will include ceviche and causa (a mashed yellow potato dish with layers of meats, seafoods, or other ingredients) as well as dim sum plates and sumai dumplings. The name Chilcano refers to a Peruvian fish stew as well as a traditional drink made with pisco, lime juice, and ginger ale.
The Post reports that there's no chef yet, but Andrés' team has already taken research trips to Asia and Peru.
This is not Andrés' first Chinese fusion restaurant. He's also got a Chinese-Mexican eatery called China Poblano in Las Vegas.
