Newton’s Noodles Bringing Chorks to Dupont

Here are two new words to add to your vocabulary: fuzu and chorks. The former is a rice noodle dish around which chef Dennis Friedman built his new fast casual restaurant, Newton's Noodles. The latter is a chopstick-fork hybrid with which to eat fuzu.

Newton's Noodles, set to open today or tomorrow in Dupont (depending on final inspections), will serve up fuzu with a customizable assembly line of proteins, veggies, toppings, sauces, and spice levels. The dish has long been one of the most popular at Friedman's Bethesda restaurant, Newton's Table. The "signature" fuzu comes with shrimp, scallops, chicken, egg, carrots, snow peas, onions, bean sprouts, scallions, crispy shallots, and black sesame. 

The 70-seat restaurant (with 40-seat outdoor patio) also sells non-noodle dishes, including ahi tuna bites, duck confit spring rolls, and beef-filled wontons. For something sweet, try the "Pattycake," a rum cake created by Friedman's wife Patty. All the dishes are served in Chinese food-like carryout boxes.
