Taan Expands Menu Under New Chef

There was plenty of confusion last month when the chef of Taan in Adams Morgan took to the restaurant's Twitter account to say the ramen shop was closing for good. It turned out that he had been fired, and the restaurant was actually operating as normal. Now, Taan has a new chef and recently rolled out a new, larger menu.

Heading the kitchen is chef Michael Phan, previously a sous chef at Taan, who used to own Bethesda Vietnamese restaurant Green Papaya, which closed in April 2012. Among the changes planned, Phan says he's expanding the ramen offerings to include bowls of beef and seafood soup in addition to the existing pork, duck, and vegetarian bowls options.

Phan is also bringing a bit of a Vietnamese flare and Asian fusion to the starters menu. You can now find shrimp and pork vermicelli summer rolls, papaya salad with spicy beef jerky, and spicy squid salad with green papaya, mint, basil, onions, and lemongrass dressing. Other starters include crispy fried wonton stuffed with shrimp and pork as well as a Japanese pancake with cabbage and shrimp known as okonomiyaki.

    they didn't expand the menu, they removed the extremely delicious and distinctive borscht-flavored veggie ramen. damn it!

    I don;t know about what was removed as I have never eaten at Taan, but from what I just saw of the menu, I will definitely be giving this place a visit. I love ramen shops and am glad to have found out about Taan. Yum!

    I second the disappointment over the beet broth elimination. Also, no veggie starters? That stinks. The corn dish was amazing, but even without that, there should be a couple no meat/no fish apps. I loved this place, so am a bit concerned...
