Bring On The Botanicals! D.C. Distillery Aims To Make Gin By Summer
Fans of D.C.'s own Gin Rickey could have a hometown spirit on hand for their native cocktails this summer. Y&H colleague Lydia DePillis over at Housing Complex has the scoop on a new distillery now under construction in Ivy City, which aims to be cranking out locally made gin within the next six months or so. "We should have gin available by the beginning of the summer," says John Uselton of New Columbia Distillers, which would be the District's first distillery in about a century.
Uselton tells Y&H he's planning to make a real dry style of the typically juniper-flavored spirit, with "a botanical line up we are working on now." He adds, "The still we have being built has 20 plates to give us clean base spirit to add our botanicals." Uselton and his father-in-law partner Michael Lowe also plan to make whiskey. But it'll take a few years before local imbibers get to taste the darker stuff.
