Growing Your Own Mushrooms: The Crowning Achievement

portabella mine

Isn't this Mushroom Adventures specimen a thing of beauty? The Portabella is sitting in a brown paper bag in the refrigerator until the weekend, when it will become part of a still-undetermined dish. I'm still taking recipe suggestions.

Clean the head with a wet towel
Make few incisions with a knife.
    Salt white pepper.
Spread room temperature high fat butter on it, a little pesto, slices of black truffles.
Wrap the whole thing with grape leaves and cook in hot oven 425 for about 6 minutes.
Unwrap the mushroom head and shave 30 months aged Parmesan cheese on it and drizzle with its own cooking liquid and a touch of Pensato extra virgin olive oil.....
    Buon Appetito

    Enzo,

Thanks for the recipe. If I can get my hands on those ingredients, I'm all over it.
