Ray's is my absolute favorite burger joint. No one else comes close. I'm relieved to read that Landrum takes the safety and quality of his product so seriously. COME ON - the man eats raw ground beef!!!

Mr. Landrum makes some good points about using higher quality products and methods of butchering, in addition to focusing on sanitation. However, he ignores the obvious reason cheap meat is sold in large quantities. He would be more honest to recommend consuming less meat of better quality if price is an issue. The consumers most at risk are not the target demographics of the current gourmet burger trend of establishments like BGR. Consuming less meat of higher quality would involve tradeoffs for many consumers. Why not promote reduced meat consumption as well?

Frankly, the fact that he openly admits to not having even read the NYT piece displays a tone deaf attitude on the subject. Most hamburgers consumed in this country come from commercial ground beef suppliers and not artinsenal ones.
