It is challenging to find a "real" French baguette in D.C. I haven't really consistently found a good baguette since the days of the French Market in Georgetown (more than 30 years ago!). Panorama makes a wonderful Baguette Breton, which is an artisanal bread. I wish their products were available to purchase year round instead of just at our local farmer's market. I agree that the baker should not lower his standards...he just needs to find a way to raise the consciousness of his customers.

Different people have different tastes. We can't please all people on Earth. Moreover, they could taste that the food tastes good but actually it tastes rotten for them. I like the advice of Furstenberg, "Never lower yourself to your customers’ tastes". Perhaps, Feillet doesn't trust himself that much that he first based the satisfaction of the costumers' reactions before himself.
