Thanks Jim. When it's cooked correctly, I prefer sauceless brisket -- that way you can taste all that smoky flavor.

Stubb's sauce was available, but was not in the picture. The two sauces in the photo are Salt Lick BBQ Sauce from the Salt Lick in Driftwood, Texas, and Dancing Pigs - Hot, a thick, plum-colored seriously hot sauce from The Barbecue Shop in Memphis.

That said, in Taylor, Texas, where Mueller's is located, the preferred sauce is none. It is a point of pride, and part of the definition of central Texas barbecue, to not use sauce. But if a person must have sauce, Mueller's offers a small Styrofoam cup of thin, oniony, and peppery "jus," or, as Mueller's calls it, "dippin' sauce." The Mueller's "sauce" is not commercially available. So other sauces were proffered at the dinner that Tim described.

The Mueller's "sauce" is not commercially available. So other sauces were proffered at the dinner that Tim described.

*Sigh!*

I wish I was a Shithead instead of just being a shithead.

Is that Stubby's sauce in the background of that image? My mouth is beginning to water.
