Food History 101: Lobster Is For the Poor
I’ve been reading through my new used copy of The Food Chronology and tripped upon this nugget, which gives you an idea of how the marketplace and supply-and-demand affect our desire for particular foods:
1630: Francis Higginson of the Massachusetts Bay Colony writes that the colony’s offshore waters are so full of lobster that he is “soon cloyed with them, they were so great, and fat, and luscious.” Lobster will for centuries be regarded as food for the poor.
