If all meat-free sandwiches were as good as the roasted cauliflower sub at G, I would go vegetarian without regret. Chef/owner Mike Isabella knows how to build rich, intricate flavors that don’t require carne. Slightly nutty, slightly sweet florets are tossed with poppy paprika lemon vinaigrette, then shoehorned into a sesame seed roll. Once arranged along the bread’s spine, the cauliflower is given a drenching of romesco sauce and gussied up with pickled scallions, arugula, and fresh herbs, like mint and parsley. It’s so satisfying that you’ll never stop chewing long enough to ask, “Where’s the beef?”
