“Carrot cake” is a rather hilarious misnomer for a supremely fattening dessert—the typical recipe calls for as many ounces of vegetables as it does cream cheese, not to mention the sugar, powdered sugar, brown sugar, and butter. When you bite into the spiced flesh of Baked & Wired’s carrot cake cupcake, though, you’re met with a rather shocking sight: carrots, lots of them, sprouting from the cake.
