Some new creations are heavy or just plain gross, but Range beverage director Owen Thomson has created a drink for carnivores that you’d actually want to taste (unless, of course, you’re a vegetarian). The Vegan Sacrifice contains Great King Street Scotch, ginger, cayenne, and spherical “beef ice” made with veal consomme. The $11 drink packs a punch from the ginger and cayenne, and the meat flavor is subtle, growing as the ice melts.
