Any coffee shop is going to smell of fresh-brewed java. But at Petworth’s Qualia Coffee, that scent is brighter, bolder, and more nuanced. That’s because self-described roast monkey and owner Joel Finkelstein is hard at work in the back room, overseeing a crackling U.S. Roaster machine. Using a self-designed computer program to track every step of the process, he works with beans sourced from Rwanda, Nicaragua, Sumatra, Papua-New Guinea, and beyond. Like what you’re smelling? Wait till the batch is finished so you can try it as a pour-over at the cafe or take a bag home.
