Order the fries at Black Jack, the upstairs portion of Pearl Dive Oyster Bar, and you’ll probably agree with the menu: “These”—being stringy, crispy, and tossed in salt and parsley—“are really good!” But what’s particularly impressive are the dipping sauces. The platter of potatoes comes with chipotle mayo, Heinz ketchup, and house-made “dive juice,” made daily with scallions, cilantro, and jalapeño. All are, well, really good. And, being as you’re seated at an oyster bar, you’ve probably ordered a round or two of mollusks—go ahead and shift the small metal tins of tartar and cocktail sauce that came with your Bluepoints over to that pile of fries and dip away.
