The D.C. Council has yet to revise the rules on street food vending, which will pave the way for all kinds of new treats. But thanks to the rise of Twitter—and the ensuing ability to alert customers to changing locations—Washington’s mobile dining scene has come into its own. These days, we have some of the most creative concepts on the road. To date, however, no one has been able to top the Fojol Brothers of Merlindia in terms of fun, flavor, and “Folosophy.” The Bros.’ carnival atmosphere, bright costumes, and handlebar mustaches ensure that every meal is served on a shtick. They offer several Indian-inflected dishes, like chicken masala and spiced lentils. (In warmer weather, check out their homemade lassi pops.) And if you eat your meal right away, be sure to take advantage of their convenient recycling and composting receptacles on the back of the truck. It’s all part of the Folosophy.
