Call it a refined response to the cutesy, cupcake-fueled dessert craze. Call it a return to French classicism. Whatever you call it, macaroons have gained a foothold in D.C., and the best place to sample this Parisian classic is at Patisserie Poupon in Georgetown. The bakery takes a subdued approach to food coloring (more Impressionist pastel than Lichtenstein neon) with its flaky meringue pastries and a liberal approach to fillings, which range from buttercream to ganache to jelly. At PP, a sampler box comes crammed with classic flavors like tart raspberry, soft pistachio, and bold chocolate. Even better, the box will set you back only about $8—a relative bargain compared to those pricy cupcakeries.
