Not counting Birch & Barley and Brasserie Beck because they actually specialize in beer, of the 99.9 percent of D.C. restaurants that focus on wine, few take beer as seriously as Proof. Wine director Sebastian Zutant tasted more than 3,000 bottles before building the restaurant’s list of more than 1,000 labels. Zutant displays similar care and passion with his beer list. Proof has five drafts and almost 20 bottles, with two or three new beers rotating in weekly. The list is balanced, consisting of a variety of styles with different profiles that can pair well with chef Haidar Karoum’s modern American cuisine. Zutant is bold with his beer selection, offering innovative brews like Houblon Chouffe, one of the original hybrid-style Belgian IPAs, and limited-release beers like Bell’s Batch 9000 or this year’s Founders Nemesis, a wheat wine conditioned in bourbon barrels that were previously used to age maple syrup. Who needs more proof that Proof is committed to beer?
