There’s plenty of that at Petworth’s Hitching Post, where besides cherished interpretations of fried chicken, fried trout, fried catfish, and fried shrimp, Alvin and Adrienne Carter serve up some of the city’s meanest fried pork chops. Why so mean? Chalk it up to Alvin’s special formula (and the fact that, as Adrienne puts it, “he’s kinda heavy with his pepper”). Once the chop is lathered with a frothy egg wash, Alvin rolls it in a seasoned flour—the contents of which are a tightly guarded secret. Then the chop gets a meticulous pan-fry treatment. (No deep-fryin’ autopilot here!) Taken with a side of generously buttered broccoli and mac-and-cheese, these delightful slices of the other white meat possess amazing restorative properties—they’re said to calm upset stomachs, cure intestinal polyps, and put rabid dogs to sleep. Short of these miracles, the Carters’ chops exude a flaky, familial tenderness sure to warm your heart and grease your arteries. Now isn’t that a comforting thought?
